Tortilla Soup
Ingredients
½ roast chicken (either make it yourself or I
usually get one from the market, can use any chicken really)
Olive oil
½ cup diced onions
2 cloves of garlic minced
1 green bell pepper diced
1 red bell pepper diced
1 yellow bell pepper diced (optional)
1 can of black beans drained and rinsed
1 can of diced roasted tomatoes with green
chilies (or just get the regular tomatoes and a can of green chilies)
1 can or fresh corn
1 box of chicken broth
Dash of cumin
Salt and pepper to taste
Lime juice to taste
Hot sauce to taste
Garnishes (very important)
avocado
tortilla chips
cilantro (finely chopped)
pepper jack cheese grated
fresh cherry tomatoes sliced in half (optional)
Heat olive oil in a stockpot or soup pot. When
the oil is hot, add the garlic and onions. After the onions are
translucent, add the bell peppers and sauté. Add the diced tomatoes with
chilies and black beans. Then add chicken stock to just cover the
ingredients. Add the corn and last add the chicken. Simmer for
awhile and add more chicken broth and the chicken from the roast chicken so
everything gets to know each other. Add the salt, pepper, cumin, lime,
and hot sauce until it tastes just delicious and a little spicy.
To serve, ladle the soup into a bowl.
Crumble some tortilla chips into the soup. Sprinkle some pepper
jack, cilantro, and cherry tomatoes and finish with some slices of the good
stuff (avocado).
